Spaghetti con albóndigas (inaugurando el nuevo blog)

[tp lang=”es” only=”y”] Este es un plato de película y lo es por que sobre todo se ha hecho famoso gracias al cine. Es el típico plato de las pelis sobre italianos y mafia americana. El origen posiblemente se encuentre en Nueva York en la comunidad Italo Americana aunque el Italia se preparan las albóndigas (polpette) de muchas maneras y en regiones de Italia podrían haber platos similares, pero el plato como tal parece haber surgido de los restaurantes de Italianos en el nuevo mundo. sea como sea está buenísimo así que lo utilizamos para inaugurar nuestro nuevo blog.

No es un plato complicado pero tiene unas cuantas partes, aquí va…[/tp]

[tp not_in=”es”] This is a classic dish that I think became especially famous thanks to cinema. It is a classic dish on all Italian-American mafia movies. It´s origins may be in New York in the Italian-American community. Although in Italy meatballs are prepared in many ways and in some regions of Italy you could find similar recipes, the dish itself seems to have emerged from the Italian restaurants in the New World. Either way it´s terrific so we use it to launch our new blog.

It´s not a complicated recipe but it has a few parts, here it goes…[/tp]

  • 1 kilo de tomate maduro rama
  • 500 grs de carne de ternera picada
  • Albahaca fresca
  • 3 Dientes de ajo
  • 500 grs de spaghetti
  • 4 cebollas chalotas
  • Queso parmesano rallado
  • Sal
  • Pimienta
  • Aceite de oliva virgen
  • 1 vaso de vino blanco
  • Romero fresco
  • 1 huevo
  • Pan rallado
  • Ajo en polvo

Esto tiene 3 partes. La primera, la salsa.[/tp]

  • 1 kg of mature tomatoes
  • 500 grams of minced beef
  • Fresh basil
  • 3 Garlic cloves
  • 500 grs. of spaghetti
  • 4 shallots
  • Grated Parmesan cheese
  • Salt
  • Pepper
  • Virgin olive oil
  • 1 glass of white wine
  • Fresh rosemary
  • 1 egg
  • Breadcrumbs
  • garlic powder or dried garlic

This has 3 parts. The first one, The sauce.[/tp]

[tp lang=”es” only=”y”] Pelamos y picamos los tomates en trocitos. Picamos los dientes de ajo muy finitos y picamos las chalotas en 4, peladas. Calentamos un poquito de aceite de oliva y hacemos un sofrito con el ajo y las cebollas. Añadimos los tomates, un par de ramas de albahaca, sal, pimienta y el vaso de vino, bajamos el fuego y dejamos cocer a fuego lento removiendo de rato en rato  hasta que espese. Cuando esté lista le pasamos un poco la licuadora dejando algunos trocitos de los tomates y las cebollas. Si queda muy espesa añadir un poco más de vino.

La parte dos, las albóndigas. [/tp]

[tp not_in=”es”]Peel and chop the tomatoes into small pieces. Chop the garlic cloves very finite and chop the shallots in 4, peeled. Heat a little olive oil and make a sauce with garlic and onions. Add the tomatoes, a pair of branches of basil, salt, pepper and the wine, lower the heat and let it simmer at low temperature stirring from time to time until it thickens. When it´s ready, with your hand blender give it a stir leaving some chunks of diced tomatoes and onions. If it´s too thick add a little more wine.
Part two, Meatballs. [/tp]

[tp lang=”es” only=”y”]En un bowl ponemos la carne picada. Sal, pimienta, las hojas de romero picaditas, un pelin de ajo en polvo y el huevo. Mezclamos bien y añadimos el pan rallado mezclando hasta tener una consistencia que nos permita hacer las bolas. Hacemos las albondigas y las reservamos. Deben salir unas 12 (no las hice demasiado grandes). [/tp]

[tp not_in=”es”] In a bowl put the ground beef. Salt, pepper, chopped rosemary leaves, a tad of garlic powder and an egg. Mix well and add the bread crumbs mixing until you have a consistency that allows you to make the meatballs. Reserve them. You should have around 12 (I did n´t made them too large).[/tp]

[tp lang=”es” only=”y”]Cuando las tengamos todas listas calentamos un poco de aceite en la sartén y las freímos dorandolas bien por todos los lados. Las vamos sacando según estén doradas a un papel de cocina para que escurran bien el aceite y las dejamos aparte.

Parte 3. La pasta, esto sin más seguir las instrucciones del paquete. Cuando tengamos la pasta lista colocamos las albóndigas en la salsa y la calentamos un poco. Servimos la pasta poniendo la salsa primero y las albóndigas encima. Un poco de parmesano rallado y unas hojitas de albahaca y listo! Es bastante laborioso pero vale la pena! [/tp]

[tp not_in=”es”]When it is all ready heat a little olive oil in the pan and fry the meatballs well on all sides to give them some nice brownish color. Then lower the temperature and keep them till they are done. take them out to a paper towel to drain the oil well and leave aside.[/tp]

[tp not_in=”es”]Part 3. The pasta, this comes without further explanation, just follow your package directions. Serve the pasta first topped with the meatballs and add the sauce (heat a bit before). Add a little grated Parmesan and a sprig of basil and you are ready! It is quite laborious but it´s worth it! [/tp]
